SAVORY BEEF AND VEGETABLE NOODLE STIR-FRY IN A STICKY GARLIC-SOY GLAZE

This Beef and Vegetable Noodle Stir-Fry is fast, flavorful, and perfect for busy weeknights. Tender beef, colorful vegetables, and chewy noodles are tossed in a glossy sticky garlic-soy glaze that clings to every bite. Better than takeout and ready in under 30 minutes.

INGREDIENTS

FOR THE STIR-FRY
1 lb beef sirloin or flank steak, thinly sliced against the grain
8 oz noodles (ramen, rice noodles, or lo mein)
2 tablespoons vegetable oil, divided
2 cups mixed vegetables (bell peppers, carrots, snap peas, broccoli, or your choice)
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
3 green onions, sliced
Sesame seeds, for garnish

FOR THE STICKY GARLIC-SOY GLAZE
¼ cup soy sauce
2 tablespoons oyster sauce
2 tablespoons hoisin sauce
1 tablespoon brown sugar or honey
1 tablespoon rice vinegar or lime juice
1 teaspoon sesame oil
1–2 teaspoons cornstarch mixed with 2 tablespoons water
Optional: chili flakes or sriracha for heat

INSTRUCTIONS

PREPARE THE NOODLES
Cook the noodles according to package instructions. Drain well and set aside.

COOK THE BEEF
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef in a single layer and sear for 2–3 minutes until browned and just cooked through. Remove from the pan and set aside.

SAUTÉ THE VEGETABLES
In the same skillet, add the remaining tablespoon of oil. Add garlic, ginger, and mixed vegetables. Stir-fry for 3–5 minutes until the vegetables are crisp-tender and fragrant.

MAKE THE STICKY GARLIC-SOY GLAZE
In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, brown sugar (or honey), rice vinegar, and sesame oil. Pour the sauce into the skillet and bring to a gentle simmer. Stir in the cornstarch slurry and cook until the sauce thickens and becomes glossy.

COMBINE EVERYTHING
Return the cooked beef and noodles to the skillet. Toss well until everything is evenly coated in the sticky glaze and heated through.
