These Queso Chicken Enchiladas are rich, comforting, and packed with bold Tex-Mex flavor. INGREDIENTS

3 cups cooked, shredded chicken (rotisserie chicken works great)
1/2 medium white onion, finely diced
4 oz can diced green chiles (undrained)
1 cup sour cream
2 cups shredded Monterey Jack or Pepper Jack cheese, divided
8–10 medium flour tortillas
1–2 cups queso blanco (store-bought or homemade)
1/2–3/4 cup heavy cream
1–2 Roma tomatoes, finely diced
Fresh cilantro or parsley, chopped

Salt, black pepper, and garlic powder to taste

INSTRUCTIONS

PREHEAT AND PREPARE
Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

MAKE THE CHICKEN FILLING
