Ingredients
For the Chocolate Cookie Crust:
2 cups chocolate cookie crumbs
5 tablespoons unsalted butter, melted

For the Strawberry Cheesecake Filling:
24 oz full-fat cream cheese, softened
1 cup granulated sugar
3 large eggs, room temperature
1 cup sour cream
1 teaspoon pure vanilla extract

2 tablespoons strawberry puree (reduced to thicken, cooled)
For the Silky Chocolate Ganache:
1 cup semi-sweet chocolate, finely chopped
3/4 cup heavy cream
1 tablespoon unsalted butter
For the Chocolate-Dipped Strawberries:
8–10 fresh whole strawberries, completely dry
3/4 cup melted semi-sweet chocolate
Directions
1️⃣ Prepare the Chocolate Cookie Crust
Preheat oven to 325°F (160°C). Mix cookie crumbs, melted butter, sugar, and a pinch of salt until evenly combined. Press mixture into the bottom of a greased 9-inch springform pan. Bake 8–10 minutes and let cool.
2️⃣ Make the Strawberry Cheesecake Filling
Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing gently. Blend in sour cream, vanilla, chopped strawberries, and thickened strawberry puree until fully incorporated. Pour over cooled crust.
3️⃣ Bake the Cheesecake
Bake in a water bath at 325°F (160°C) for 50–60 minutes until the center is just set. Cool at room temperature, then refrigerate for at least 4 hours or overnight for best results.
4️⃣ Prepare the Silky Chocolate Ganache
Heat cream until just simmering. Pour over chopped chocolate and butter. Let sit 1–2 minutes, then stir until smooth and glossy. Allow ganache to cool slightly before pouring over chilled cheesecake to create a mirror-like drip.
5️⃣ Chocolate-Dipped Strawberries
Dip dry strawberries in melted chocolate, let excess drip off, and set on parchment paper until firm. Decorate the top of the cheesecake with the chocolate-dipped strawberries.
