Total Time: 20 minutes
Servings: 3 sandwiches
Ingredients
Cheesecake Filling
8 oz (225 g) cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
Pinch of salt
Sandwich Assembly
6 slices thick-cut brioche or white sandwich bread (crusts on)
1 cup fresh strawberries, thinly sliced
3–4 tablespoons unsalted butter, softened
Instructions
Step 1: Make the Cheesecake Filling
In a small bowl, whisk the softened cream cheese, powdered sugar, vanilla extract, and salt until completely smooth, creamy, and fluffy. Set aside.
Step 2: Assemble the Sandwiches
Spread a thick, even layer of the cheesecake filling onto three slices of bread. Arrange the sliced strawberries in a single layer over the cream cheese, slightly overlapping and allowing a few slices to reach the edges for a visible strawberry layer. Top with the remaining slices of bread to form sandwiches.
Step 3: Butter the Bread
Spread a thin, even layer of softened butter on the outside of each sandwich, covering both the top and bottom slices. This ensures a golden, crispy crust.
Step 4: Grill the Sandwiches
Heat a non-stick skillet or griddle over medium-low heat. Place the sandwiches in the pan and cook for 3–4 minutes per side. Gently press with a spatula to promote even browning. Flip carefully and cook until the bread is deep golden brown and the filling is warm and slightly melty.
Step 5: Serve
Remove from the pan, slice diagonally if desired, and serve immediately while hot and crispy.
Tips for Best Results
Cook over medium-low heat to prevent burning before the filling warms through. Position strawberries close to the bread edges for a visually appealing presentation. For extra crunch, lightly sprinkle granulated sugar on the buttered side of the bread before grilling.
Texture and Flavor
These grilled strawberry cheesecake sandwiches have a crisp, buttery exterior with a rich, creamy cheesecake filling and fresh strawberry sweetness, making them perfect for dessert, brunch, or a sweet snack.
