Ingredients

2 cups all-purpose flour
1 tbsp baking powder
1 tbsp sugar (optional, for better browning)
1 tsp salt
1/2 cup cold butter, cubed (plus extra for brushing)
3/4 cup cold buttermilk (or milk)

Instructions

1️⃣ Preheat
Preheat oven to 450°F. Line an 8×8 or 9×9 pan, or prepare a baking sheet.

2️⃣ Mix Dry Ingredients
In a large bowl, whisk together flour, baking powder, sugar, and salt.

3️⃣ Cut in Butter
Add cold cubed butter. Cut it into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.

4️⃣ Add Milk
Pour in the cold buttermilk. Stir gently just until the dough comes together. Do not overmix.

5️⃣ Create Layers
Turn dough onto a lightly floured surface. Pat into a 1-inch thick rectangle. Fold in half, then fold in half again to create layers.

6️⃣ Shape & Cut
Pat dough back into a 1-inch thickness. Cut into squares using a sharp knife or bench scraper. Avoid twisting to keep layers intact.

7️⃣ Arrange
Place biscuits close together in the pan so they touch. This helps them rise taller and stay soft on the sides.

8️⃣ Bake
Bake for 12–15 minutes until golden brown on top. Brush immediately with melted butter for extra flavor and shine.

Tips

Use very cold butter for maximum flakiness.
Do not overwork the dough or the biscuits may become dense.
For extra richness, replace 2 tablespoons of milk with heavy cream.
