👩🍳 How to Make It
1️⃣ Marinate the Lamb
In a bowl, mix olive oil, garlic, rosemary, thyme, lemon juice, salt, pepper, and paprika. Rub generously over lamb chops and marinate at least 30 minutes.
2️⃣ Roast the Potato Wedges
Preheat oven to 425°F (220°C). Toss potato wedges with olive oil, salt, pepper, oregano, and garlic powder. Spread on a baking sheet and roast 30–35 minutes, flipping halfway, until crispy outside and tender inside.
3️⃣ Grill the Lamb Chops
Heat grill or grill pan to medium-high. Grill lamb chops 3–4 minutes per side for medium-rare (adjust to preference). Let rest 5 minutes before serving.
4️⃣ Prepare the Cucumber Salad
Toss cucumber, cherry tomatoes, and red onion with olive oil, red wine vinegar, parsley, salt, and pepper. Chill until ready to serve.
5️⃣ Plate & Serve
Arrange lamb chops with golden wedges and fresh cucumber salad. Garnish with extra herbs or a squeeze of lemon if desired.
