📝 Ingredients

For the Lemon Dijon Chicken:
2 large boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
2 cloves garlic, minced
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper

For the Couscous:
1 cup couscous
1¼ cups low-sodium chicken broth or water
1 tablespoon olive oil
Pinch of salt

1 small garlic clove, minced
1 tablespoon olive oil

1️⃣ Cook the Couscous

Bring chicken broth or water to a boil. Stir in couscous, olive oil, and salt. Cover, remove from heat, and let sit 5 minutes. Fluff with a fork.

2️⃣ Cook the Lemon Dijon Chicken

In a bowl, mix olive oil, Dijon mustard, lemon juice, lemon zest, garlic, paprika, salt, and pepper. Coat the chicken and marinate at least 15 minutes.
