1 lb ribeye steak or deli roast beef, thinly sliced
1 medium onion, finely chopped
1 green bell pepper, thinly sliced
1 tbsp olive oil or butter
Provolone cheese slices or shredded mozzarella/cheddar blend
12–16 egg roll wrappers
Oil for frying (vegetable, canola, or peanut oil)

Instructions
Heat oil or butter in a skillet over medium heat. Sauté onions and bell peppers until softened. Add thinly sliced steak, season with salt and pepper, and cook until just browned. 1 cup shredded cheddar or American cheese
