KETO PULL-APART GARLIC LOAF

This is the keto bread that makes people stop mid-bite and say, “Wait… this is LOW CARB?”
Soft, cheesy, pull-apart goodness with a golden crust and buttery garlic finish. Perfect as a side dish, appetizer, or snack that sparks debate at the table.

DOUGH INGREDIENTS

2 cups shredded mozzarella cheese
2 oz cream cheese
1¾ cups almond flour
2 teaspoons baking powder
2 large eggs
1 teaspoon garlic powder
Pinch of salt

3 tablespoons butter, melted
2 cloves garlic, finely minced
2 tablespoons chopped parsley or cilantro
2 tablespoons grated Parmesan cheese

PREP THE OVEN

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and help with even browning.

MELT THE CHEESE

In a microwave-safe bowl, melt the mozzarella and cream cheese together in 30-second intervals, stirring between each round, until smooth, stretchy, and fully combined.

MAKE THE DOUGH

Stir in almond flour, baking powder, garlic powder, and salt until combined. Add the eggs and mix until a thick, elastic dough forms. It will look suspiciously like real bread dough. This is normal. People will accuse you of cheating.

SHAPE THE LOAF

Divide the dough into small, equal balls. Arrange them tightly together in a round loaf shape on the prepared baking sheet so they touch slightly. This creates the classic pull-apart texture once baked.

BAKE

Bake for 18–22 minutes, or until the loaf is puffed, deeply golden on top, and set in the center.

GARLIC BUTTER FINISH

While the bread is hot, brush generously with melted butter mixed with garlic. Sprinkle Parmesan cheese and fresh herbs over the top. Add flaky salt if you’re feeling bold.
